PRE-CONCERT GALA MENU:

Main Courses:
Bacon Wrapped Sirloin and Chipotle Chicken:
The Sirloin is grilled and served with a Bourbon Apricot sauce. The Chicken is grilled white and dark meat with subtle flavors of cilantro, paprika, and smoky jalapenos, with just the right amount of heat.

Vegetarian option*: Southwestern enchilada bake:  A trio of black beans, red beans, and pinto beans with cilantro, corn and peppers, layered in corn tortillas topped with a red sauce and jack cheese. * Veggie-lovers, we want to give our caterer a count. Please email sandrarockman@sbcglobal.net to let us know that this is your preference.

“Ranch Style” Beans with tomatoes, onions, chilies and our special blend of spices.

Country Red Potato Salad: Tender red potatoes, in a tangy mustard herb dressing.

Tender baby green salad with blue cheese crumbles, pecans in a honey raspberry dressing.
